انتخاب غذا به مثابه یک مسأله اجتماعی: تأملی بر تعیین کننده های اجتماعی ـ فرهنگیِ انتخاب غذا

چکیده
زمینه و هدف: انتخاب غذا در مقام یک مساله اجتماعی مانند سایر کردارهای انسانی، تحت تأثیر عوامل مختلفی قرار دارد. غیر از عوامل زیست شناختی و فیزیولوژیک، محدودة وسیعی از عوامل مانند عوامل فردی، محیطی، فرهنگی و اجتماعی ممکن است بر انتخاب غذا اثر داشته باشند. از این رو، این مطالعه با هدف مروری بر مطالعات انجام شده در زمینه تعیین کننده های انتخاب غذا و به ویژه علل اجتماعی ـ فرهنگی زمینه ساز آن انجام شد.
روش و مواد: این مطالعه مروری با جستجو در بازة زمانی سال 1995 تا 2017 انجام گرفت. ابتدا با استفاده از کلیدواژههای Food choice، determinants، factor و همچنین از طریق موتورهای جستجو شامل Google Scholar، Pubmed، Science direct، Scopus ، Irandoc، Magiran، SID و بانک های مقالات علوم بهداشتی و پزشکی، مقالات کامل و درصورت عدم دسترسی به مقالات کامل، خلاصه مقالات استخراج گردید. جستجو در ابتدا با کلیدواژههای food choice and determinants انجام و سپس با استفاده از کلیدواژههای culture وsocial، جستجوی مقالات محدود شد. 22 مطالعه به زبان فارسی و انگلیسی که به روش کمّی (6 مقاله) و کیفی (16 مقاله) انجام شده بود، که همه آنها جهت بررسی وارد مطالعه شدند.
یافته ها: در مطالعات بررسی شده، مفاهیمی چون خوداثربخشی تغذیه ای، رسانه، عوامل اقتصادی اجتماعی، زمینه های اجتماعی، سواد، ترکیب خانوار، نابرابری طبقات اجتماعی، شغل، مزه، دسترسی آسان، عادات، ترجیحات غذایی، آگاهی، تأثیر دوستان، همسالان و والدین، تحصیلات والدین (در نوجوانان)، مهارت های پخت و پز، کیفیت تغذیه ای، دورة زندگی، ایده آل ها، منابع، پرهیزهای غذایی، تجارب گذشتة افراد، سلامت، سنت های قومی، زمان کافی، تجارب لذت بخش از مواد غذایی، سیر کردن شکم و مفاهیم دیگری که اختصاص به گروه هدف مورد بررسی داشت، به عنوان عوامل تعیین کنندة انتخاب غذا در بیشتر مطالعات مورد بررسی استخراج شد.
نتیجه گیری: جمع بندی مطالعات نشان دهندة اهمیت متغیرهای اجتماعی ـ فرهنگی در انتخاب غذا و نوع انتخاب ها در بین افراد مختلف در گروه های متنوع بود و می توان با در نظر گرفتن آنها، در جهت طراحی و اجرای مداخلات تغییر رفتار اقدام نمود. با این وصف، بررسی های بیشتر در زمینه عوامل اجتماعی ـ فرهنگی باهدف برنامه ریزی های غذایی ضروری است.
